Chocolate Chip Coconut Flour Banana Bread (Gluten Free)

When Sunday rolls around, there is a sudden feeling of ‘lazy.’ We want to sleep in have a breakfast in bed kind of day. Since having the flu, there is not much outing I could do today so I decided it is the perfect day to bake!

I personally love baking. I am a big fan of always finding the healthier alternative to everything because I have a big sweet tooth but like to stay health conscious.

I recently decided to make an investment into Coconut Flour.

Everything coconut taste delicious! The perfect combination with coconut would have to be bananas, and something chocolatey. I am not very creative when it comes to baking my own recipe so of course I went ahead and googled ‘banana bread with coconut flour’ and of course many links popped up full of numerous recipes.

I went ahead and clicked the first link and came across the perfect healthier alternative to banana bread. It is gluten free and paleo! The only flour used is coconut flour and even better, you only need half a cup!

It is heavy in fibre, refined-sugar free, and butter free. I mean what can get better then this! I have also added the recipe down below so go ahead and try it out for yourself. You will not regret it.

INGREDIENTS

  • 4 medium ripe bananas, mashed (3 large would work fine)
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1/4 cup almond butter
  • 2 tablespoons coconut oil, softened
  • 2 eggs, at room temperature
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
